Smartphone invasion.

I need a smartphone, iphone, to be hacked without the person noticing. I want to have access to all content on this device in real time. I want to be able to see whatsapp, instagram conversations, listen to the ambient audio whenever I want, view photo albums and everything. He would need to have a control panel where he could see it all. So the service delivery would be this hacked phone and a control panel so I have access to everything. The only data I will pass will be the mobile number. Possible to be done?
